About our pasta
What makes our pasta special? We use only the highest quality ingredients. Our flour used is milled to a fine or very fine grain. We use All Purpose Flour, “00” Caputo Pasta flour and Semolina Flour from Italy to make all of our pasta. Our eggs are free-range, and water or juices are used sparingly to complete the dough for extrusion. We have many different shapes and flavors to choose from. Whether it’s a traditional pasta or flavored, the process remains the same. Time honored traditions are highly respected and followed.
What are your ingredients? We use only the freshest and best ingredients in our pasta. We source our flour from Italy, and the egg used are free-range eggs. The water is RO water (reverse osmosis), which helps to keep the product free from contaminants in city water. We do have Gluten-Free flour to make gluten-free pasta for those with wheat allergies. It is a blend of garbanzo bean flour, white sorghum flour, tapioca flour, and fava bean flour, and contains absolutely no gluten. We make all of the gluten-free pasta first, so there is no threat of any gluten entering the pasta. Should your diet be Vegan, we can source egg-free substitutions for your pasta.
Is our pasta dry or fresh? All of our pasta produced is as fresh to you as the day we made it. We do not dry the pasta before vacuum packaging. It remains moist and cuts the prep and cooking time in half. The pasta only needs to be boiled in 2-3 quarts of water for 3-4 minutes, or until Al Dente for your preferences. Using dried pasta takes 8-10 minutes to cook.
How do I place an order? Customers are able to use the online form through the website, via a phone call, or in person to order pasta.
Where do you deliver? We do not currently have the availability to deliver products via any of the delivery resources. Shipping would require cold shipping using dry ice, and would defeat the purpose of fresh pasta. If necessary we could deliver in a 25 mile radius from our business home.
When will I receive my order? Once the order is finalized, we will do our best to have the product to you within 2-4 business days.
What is your return policy? All sales will be final. Scalzott’s Fresh Pasta will do everything possible to make the customer happy. We will replace the product purchased with another package of the same product if deemed to be damaged or non-consumable. If the customer feels there are quality concerns, please call our phone number and we will do what’s necessary to make the customer happy with Scalzott’s Fresh Pasta.
How should I store the pasta? Our pasta should be refrigerated once received, and consumed within 2 weeks. The pasta will last longer in the refrigerator (up to 30 days), but the product may “oxidize” leaving the pasta with a color change. However, the pasta will still be able to be consumed. Customers may freeze the pasta if waiting longer than 14 days.
How do I cook the pasta? The pasta should be boiled in 2-3 quarts of water for 3-4 minutes, or until “Al Dente”, or your individual preference. Due to the pasta being fresh and not frozen, the cooking time is greatly reduced. If you have chosen to freeze the pasta allow to thaw, and consume within 4-5 days. Prior to cooking, allow the pasta to “air dry” for 15-30 minutes before cooking and “fluff” the pasta on a plate or other surface. Since the pasta is fresh and vacuum sealed, the pasta is somewhat “smashed” together. The drying and “fluffing” time will help to separate the pasta prior to boiling, alleviating a congealed lump of unconsumable pasta.
Can I Freeze the pasta? Absolutely! Any of our pasta can be frozen for future consumption.
Can I find your product in stores? Currently, the only place to obtain our pasta is at Mackay’s Market @ 626 6th Avenue Tarentum, PA or at 213 Paul Drive Lower Burrell, PA. We will also be one of the vendors at the Lower Burrell Farmers Market starting in late May through early October on Saturdays from 9:00AM - 12:30 PM.
Do you offer special orders? If you need pasta for a special event, weddings, or wholesale purchases, please provide at least a week to deliver the product.
